Slow cooking is the key to this dynamic recipe. Due to this cooking process, less expensive cuts of meat can be used. Actually, they are more flavorful and tender using this process. We have found a sultry and seductive chili is produced using a slow cooking technique.
Finding a recipe that uses your local grocery store ingredients is a time and money saving benefit of this chili. There are no fancy ingredients that you have to go to a specialty shop to buy. So, you can get the ingredients during one of your weekly food shopping trips. This recipe is time and money saving and produces a sultry chili that your family and friends will think came from a high-class restaurant.

Dynamic Chuck/Pork Roast Chili
One Pot Chili that Cooks Itself
Ingredients
3-5 lb. pork roast
salt and pepper to taste
1 onion
1 red, green or yellow bell pepper
½ cup finely chopped parsley or cilantro
4 cloves of garlic
2-3 chopped jalapenos with seeds
1 teaspoon of salt
2 tablespoons of cumin
1 tablespoon of chili powder
(A local grocery store brand is fine.)
3 16 oz. can of black beans
Use one 16 oz. can of beans for every pound of meat.

Trim fat down to you dietary requirement or remove after cooking. Leave the bone in to cook – it adds more flavor.
Put chuck roast or pork roast in roasting pan with a lid. Add 64 ozs. of liquid in with the meat. Salt and pepper the meat. Put the fat side up. Roast the meat only on 350 degrees for 2 hours. Leave the bone in the meat.
After roasting the meat for 2 hours, put in all of the remaining chili ingredients. Putting the vegetables in for the last hour will not only cook them through, but the vegetables will maintain their color and consistency. This cooking technique will not allow them to be absorbed into the broth.
Add onion of your choice, green, red, or yellow bell pepper. Add chopped cilantro, chopped garlic, and finely chopped jalapenos. If you want more heat, put the seeds in from the hot pepper. Otherwise discard the seeds.
For spices, add salt, cumin, and your favorite chili powder.
At the end of the 2-hour cooking time, add the vegetables and seasonings to the meat broth. Remove the meat and let stand. Be sure the meat is tender enough – it should be almost falling off the bone. Stir the vegetables into the meat broth. Roast the vegetables and V8 broth for one hour at 350 degrees.
Check the vegetable mixture after an hour, and if vegetables are cooked through, remove the pan from the oven. Stir in 3 cans of beans. Cover and let sit about 30 minutes until beans heat through.
Pull the meat apart into shreds. Discard fat and bone. Add the meat into the bean and broth mixture.
Serve with sour cream and shredded cheddar cheese. Makes 17 servings for $$$24. That’s $1.41 per serving.

CHILI SHEPHERD’S PIE WITH BUTTERMILK POTATO TOPPING

Take my Chili Shepherd’s Pie with Buttermilk Potato Topping, for example. I start with my Kitchen Workhorse Chunky Beef Chili. The chili is great as a stand-alone, but it’s also a key ingredient in several spin-off recipes.

Then, I vacuum-package the extra chili with my FoodSaver appliance and freeze the remainder in controlled sizes to use later for other recipes, like my tasty Soft Beef Tacos or Chili and Macaroni Casserole. Voila! From one meal, many.

CHILI SHEPHERD’S PIE WITH BUTTERMILK POTATO TOPPING

(Makes four servings)

2 pounds Yukon Gold

potatoes, peeled and cut into 1-inch chunks

2 tablespoons unsalted butter

1/2 cup buttermilk, preferably at room temperature

1 quart Kitchen Workhorse Chunky Beef Chili (found on page 150 of “Kitchen Life”), heated

1 1/2 cups fresh or thawed frozen corn kernels

1/3 cup (about 2 1/2 ounces) shredded sharp cheddar cheese

Position a rack in the center of the oven and preheat the oven to 400 degrees. Lightly oil an 8-inch square baking dish.

Place potatoes in a medium saucepan and add enough cold, lightly salted water to cover them by 1 inch. Bring to a boil over high heat. Reduce heat to medium and cook potatoes until tender, about 20 minutes.

Drain potatoes and transfer to a bowl. Add the butter. Mash potatoes with a masher or an electric mixer on low, gradually adding the buttermilk. Season with salt and pepper.

Mix the chili and corn in the baking dish. Spread the potatoes on top of the chili and sprinkle with the cheddar. Bake until the cheddar melts and the topping is tinged with brown, 15 minutes to 20 minutes. Serve hot.

Cool Summer Soup Recipes – A Food Processor And 10 Minutes Is All You Need

Summer is coming and so is the hot weather. Nobody likes to cook in the heat of summer. A really hot meal on a hot day is almost as unpopular. It could be that a cool, easy to prepare summer soup is just what you need.

Below are 3 recipes for soups that can be made in your food processor or blender. If you have the ingredients on hand, none of them take more than 10 minutes to make. They are all delicious, nutritious, and really refreshing on a hot day. While the recipes all suggest you use a food processor, you can get very good results by using a blender or hand blender too.

These are all very simple recipes, so don’t be shy to modify them and get a taste that your whole family can enjoy.

Here are the recipes.

Summer Vegetarian soup
This is great tasting soup with a touch of Italy included. It is super easy to make and very healthy. It is particularly good on a hot summer day

an avocado – skin and pit removed of course
4 Roma tomatoes – they may not be quite juicy enough (see below)
Basil to taste (Thai basil is really good in this)
4 tablespoons of extra virgin olive oil

Process
How easy is this soup? Simply throw everything into your food processor and mix until it is smooth. If you find that it is more like a smoothie than soup, simply add more liquid (or swap one of the Roma tomatoes for another more juicy variety). Pour into bowls, garnish as you wish (minced chives are nice) and enjoy.

Sensational Salsa & Black Bean

This soup is a very simple soup that takes just a few minutes to prepare. It can be served hot or cold, but always benefits from being heated.
Roughly 4 servings

INGREDIENTS:
2 normal sized cans of black beans (any brand is OK, but try for low salt)
1 1/2 cups soup stock (Just use chicken, beef, or vegetable bullion)
1 cup of your favorite salsa (chunky makes a heartier soup)
1 teaspoon cumin (best to use fresh ground in the soup and you can sprinkle seeds on top too)
1/4 cup of sour cream
1-2 green onions chopped fine

Process:
Put the beans, salsa, cumin, and soup stock into a food processor (a blender is OK too). Puree the mixture until it is creamy in texture. Pour the mixture into a mid-sized pot and heat on low-medium until it is completely hot. This allows the flavours to merge. If you are going to serve it cold, move it to the fridge to cool off till it is time to eat. To eat it hot, simply serve into bowls and garnish with the onions and some of the sour cream.

MANGO SOUP

Mangos are simply divine. They are great as a fruit, mixed into drinks, added to salads. They also make a really good cool summer soup which is explained below.

Ingredients:

1 large RIPE mango (it will be soft, no squishy, to touch)
2 cups chicken soup stock (make your own or use bullion if you must)
1 TBSP lemon grass (available in most Asian markets, it looks like long greenish reeds when you buy it)
1 TBSP ginger – Freshly chopped is best
Ground chili peppers to taste
1 cup yogurt (2% plain is best)
2 TBSP cilantro (chinese parsley) chopped fine

Process:
Chop mango and put in food processor. Mix briefly and then put in the ginger, lemon grass, chili and 1/2 cup of soup stock. Mix again till everything becomes very smooth. Move the soup into another bowl (be sure it is large enough) and mix in first the rest of the stock, and then the yogurt. This is best served cold, so put in fridge till you are ready to eat. Then put into bowls and serve with the cilantro as the garnish.
