Creamy Hot Chocolate
1 (14 oz.) can sweetened condensed milk (NOT evaporated milk)
½ cup unsweetened cocoa
1 ½ teaspoons vanilla extract
1/8 teaspoon salt
6 ½ cups hot water
Marshmallows (optional)
Directions
In large saucepan over medium heat, combine sweetened condensed milk, cocoa, vanilla, and salt; mix well. Slowly stir in water. Heat through, stirring occasionally. Do not boil. Top with marshmallows. Store covered in refrigerator. *Will last up to 5 days.
Makes 8 servings.
Easy Mexican Hot Chocolate
3 tablespoons instant hot chocolate mix
1 tablespoon chocolate syrup
½ teaspoon ground cinnamon
1 pinch chili powder
¼ cup milk
¾ cup boiling water
Directions
In a large mug, mix the hot chocolate mix, chocolate syrup, cinnamon, and chili powder. Pour in the milk. Add the boiling water and stir.
Makes 2 servings.
Spicy White Hot Chocolate
3 ¼ cups 2% fat milk
6 oz. white chocolate, chopped
1 egg, beaten
¼ teaspoon cayenne pepper
½ teaspoon ground cinnamon
Directions
Place the white chocolate in a medium metal bowl over a pan of barely simmering water, or in the top half of a double boiler. Allow the chocolate to melt, stirring occasionally until smooth. Stir in cayenne pepper and cinnamon. Whisk in the egg until smooth.
Gradually whisk in one cup of the milk until completely incorporated, about 2 minutes.
Gradually whisk in remaining milk, and heat until hot, but not simmering. (You don’t want a skin to form on top of the milk). Chocolate will be ready to drink when either the taste of the cayenne is masked by the temperature of the milk (the spiciness of the pepper will remain), or when the hot chocolate is at your desired temperature.
Ladle the hot chocolate into mugs and garnish with a sprinkle of cinnamon.
Makes 4 servings.
Zingy Mocha Hot Chocolate
½ cup semisweet chocolate chips
½ cup milk
¼ teaspoon ground cinnamon
1 dash hot chili powder
1 teaspoon instant coffee granules
½ cup cold milk
Marshmallows and chocolate sprinkles (optional)
Directions
Combine the chocolate chips and milk in a glass or plastic dish, microwave on high, stirring every 20 – 30 seconds, until melted and smooth. Mix in the coffee, cinnamon, and hot chili powder until the instant coffee has dissolved. Stir in the cold milk.
Strain into 2 mugs. Thin with additional milk, if desired. Garnish with marshmallows and chocolate sprinkles.
Makes 2 servings.
Peanut Buttercup Hot Chocolate
1 (1 oz.) envelope instant hot chocolate mix
2 teaspoons creamy peanut butter
Directions
In a mug, prepare chocolate mix as directed on package. Stir in 1 or 2 teaspoons of peanut butter. Enjoy.
Makes 1 serving.
Russian Hot Chocolate
1 oz. vanilla flavored vodka
¾ oz. amaretto liqueur
1 tablespoon instant hot chocolate mix
4 oz. hot milk
Directions
In a coffee mug, pour in the vanilla vodka, amaretto, and add the hot chocolate mix. Pour in the hot milk and stir to blend well.
Makes 1 serving.
Hot Chocolate Mix Recipe
11 cups dry milk powder
1 (8 oz.) container powdered non-dairy creamer
2 ½ cups confectioners’ sugar
1 (16 oz) container instant chocolate drink mix
Directions
Sift together the powdered milk, non-dairy creamer, powdered sugar and instant chocolate drink mix. Store in air tight containers or glass jars for gift giving
To use: Add 3 to 4 tablespoons of mix to 1 cup of water. Add a dash of cinnamon, If desired.

Bamboo Shoots: Bamboo shoots are called for in many Thai recipes. In order to prepare a bamboo shoot for cooking you need to peel them and boil the white inner stalks for 30 minutes in water. Basil (fresh): There are three types of basils used in Thai cooking; sweet, holy and lemon. Sweet basil is much easier to find because it is commonly used in western cooking. Holy basil has a spicier taste and can be recognized by it’s slightly purple leaves. Lemon basil has a lemony flavor and can be detected by its distinct lemony scent. If you can only find sweet basil you can compensate for holy or lemon basil by adding finely chopped chili peppers or a bit of lemon rind.

Bergamot: Also known as kaffir lime leaves has a slightly limey flavor which goes well with all Thai dishes. Since this may be hard to find, granted lime rind can be used in its place although it is a poor substitute.

Chili paste: This can be bought in bottles or tubes in almost any supermarket. Used for adding spice and flavor to most dishes, a particularly popular version by Thai cooks is burnt mild chili paste.

Chinese mushrooms: Mushrooms are added to a lot of Thai cooking and many people chose to use the dried variety because they are cheaper and have just as much flavor and nutritional value. You will need to soak the mushrooms in warm water for 30 minutes before using them and the stems are usually discarded because of their tough nature.

Coconut milk: Coconut milk can be bought in cans almost anywhere. If the recipe you are using calls for coconut cream scoop the harder white substance that has formed at the top of the can. If you need coconut milk, stir the can thoroughly before using.

Curry Paste: While some people prefer to prepare their own curry pastes, many bottled curries are available at the supermarket. Most recipes use red, green or yellow curry.

Fish sauce: Made from collecting the liquid off of fermenting salted fish, this pale, watery brown sauce is sometimes used to replace all the salt in recipes. It is very flavorful and compliments all Thai food. It is called for in many recipes but you can also use your imagination with it, as it is very versatile.

Galangal: A close relative to ginger, is used in many curries and soups. Since it is quite rare to find fresh you will probably have to purchase it dry and soak it in water for 1 hour before using.

Garlic: Thai garlic might be available in some Asian markets, however if you cannot find it, the Western variety will work just as well. Use the smaller, tighter cloves on your garlic head for Thai cooking because they are more flavorful and will not be over powered by the other herbs and spices used in your dish.

Ginger: Easy to find and used quite often in modern cooking, ginger is extremely healthy and flavorful. It must be peeled before it is grated or chopped. Fresh ginger is much better than dried, although dried may be substituted if needed.

Lemon grass: Lemon grass is one of the most commonly used items in Thai cooking. It is a long stalk that looks like a small leek. The hard outer portion should be removed and the lower, bulbous part is used. You can either add sliced pieces to your food while it is cooking and remove them before serving your dish, or you can blend them in a food processor so they can be consumed with the dish, which will give it more flavor.

Palm Sugar: Some Thai recipes call for palm sugar which is available in some Asian markets as cellophane wrapped blocks. If palm sugar is unavailable you can substitute with dark brown sugar or real maple syrup.

Rice: Thai people prefer long-grain white Jasmine rice. This is a flavorful and aromatic rice that cools and compliments spicy Thai dishes.

Rice papers: Used for making fresh Thai spring rolls, you can buy rice papers at any food store. To use soak papers (one at a time) in warmish water until they are soft and pliable, then dry off with paper towel and use immediately.

Sesame Oil: A vegetable oil that comes from pressed sesame seeds and originated in East India. This is a very flavorful oil and works very well with Thai cooking.

Preparation and cooking techniques:

Vegetables: Vegetables used in Thai cooking should be cut as finely as possible. The idea is that the smaller they are chopped, the less time they will need to be cook, therefore retaining as much nutrients as possible.

Stir frying: Most people have cooked a stir fry before, so will be familiar with this method of cooking. Oil should be poured into a wok and vegetables should be added over high heat while being constantly stirred. Vegetables should only be stir fried for a couple of seconds so they remain crisp and brightly colored.

Mortar and Pestles: Perfect for making sauces, curry pastes and salads, every Thai cook should own a mortar and pestle preferably made out of clay or wood.

Mincing: Since Thai cooking uses so many intensely flavorful ingredients they should all be chopped very finely so one flavor never overpowers the other. You should always use a very sharp knife for this.

Roasting and grinding spices: When adding spices and herbs to your Thai dish you should always roast them by slowly heating each spice individually in pan until they begin to crackle and turn brown. When each spice is done roasting they should be ground very finely in a food processor or mortar.

Even if you don’t really follow football closely or at all – everyone celebrates the Superbowl. There is fun for everyone, like new and funny commercials, over the top pre-game and half time shows, and an excuse to have a party, eat and drink too much.

The foods that are most famously associated with this event are admittedly geared more towards men and carnivorous choices but, you can find a vegetable or legume on the list too. Some items on the list can be made as unhealthily or healthful as you like by the ingredients you use.

Most would agree that the Superbowl is all about food, friends and fun!

Okay, Here is my list of the top ten Superbowl foods:

10. Chips, Dips, Salsa and Nuts

This is a big umbrella of general “snack food” or ” junk food”. Beer nuts or any kind of nuts are almost a pre-requisite for a Football party anyway. There are some really great appetizers that are now almost synonymous with Football. For example: Nachos – whether you just pour some melted cheese on them or go all out with salsa, guacamole, jalapenos, black olives, refried beans and spiced ground meat – these are always a crowd pleaser. There’s also the “old fashioned” Chex mix that is really quite a nice retro snack. Purchase, various Chex cereal flavors, add mini pretzels, some peanuts, melt some butter and honey with some kicked up seasonings – mix them all together and spread them out on a cookie sheet in the oven on 350 for 15-20 minutes. Great stuff.

9. BBQ Baked Beans

The classic baked bean recipe can take over 24 hours to prepare and serve. It involves soaking the dry beans which takes up most of the time, and marinating and baking the beans in a combination of Molasses, brown sugar and BBQ sauce. It normally has Pork in it too and that adds a really great flavor but, if that’s not your bag you can substitute ground turkey or have no meat at all.

8. Steak Tips

There are also Turkey, Swordfish and Chicken tips out there too now a days. Whichever you choose, marinating them in a good marinade first is a must. Steak will need the longest in a marinade but, all of them will be great once they are grilled on a nice hot grill. Pair tips with Salad and a mixed rice and you are all set!

7. Sandwiches

I prefer the foot long Italian hoagie from the local deli cut up into 2 or 3 inch size sandwiches. Hot peppers are a necessity but should probably be “on the side” for the less inclined. Any kind of sandwiches will work really and Calzones which are not really considered sandwiches are a great choice because they are easy to eat while not sitting down and come in all kinds of yummy flavors.

6. Pizza

Well, I had to put it on the list. It is really popular as a football food. It’s not truly my choice but, considering that watching football is a male oriented past time and most men are not into cooking, it makes sense that something you can pick up the phone and have delivered within 30 minutes (men are not normally planners either) would be on the list. PS: Anything that can be ordered, created and delivered within 30 minutes is not something I would recommend for adults – Children…okay.

5. BBQ Pork with all the fix’ins

This choice is really for a dedicated BBQ’er and will take some time to do right but, boy. It is well worth it. You really have to start this menu item the day before you want to enjoy it. It takes a smoker and a pork butt, some good dry rub, a mop sauce (this is important as far as I am concerned) and some good BBQ sauce along with a dedication to the low and slow way of cooking. In addition to the pulled pork, lay out some hamburger buns, home made cold slaw, and some chips and you have the perfect football party meal.

This is one of the most versatile and easy one-pan dishes you can make. You can prepare it for a whole crowd using a crockpot and it has so many variations there is bound to be one that’s to your liking. Just type in “Chili Recipes” in Google or your favorite browser and see all of the hits you get. Yep, you can’t go wrong with a good chili. Make sure to have extra hot sauce for the diehards that insist on kicking it up a notch!

And really, what’s better than a sweet Italian Sausage smothered in sauted peppers and onions with gobs of mustard all wrapped up in a bun – mummm mummm. You can take a walk at half time to make up for it.

Amateur Chefs Compete For Top Citrus Honors

For the 2005 Sunkist Citrus Challenge, hundreds of at-home chefs across the country proved that a splash of citrus can spice up any meal and inspire flavorful, fun and quick creations that any cook would be eager to share.

The national contest called for amateur chefs to enter their recipes in three categories: Entree, Quick & Easy and Citrus Celebre. Entrants from nearly 30 states submitted their signature, citrus-inspired recipes.

After much blending, sauteing, stirring and simmering, official Sunkist Citrus Challenge judges announced in March that they had discovered three excellent recipes bursting with citrus flavor. The winning chefs were Lisa Keys of Middlebury, Conn., Edwina Gadsby of Great Falls, Mt., and Nikki Norman of Milton, Tenn.

“It’s a delight to see how the premium great taste and versatility of citrus inspired such creativity in the kitchen,” said chef Nancy Swinney, one of the contest’s head judges.

The winning recipes were evaluated by a panel of judges using the official criteria – taste, ease of preparation and accordance with a fun, wholesome and healthy lifestyle. Each winning chef was awarded $2,000 and a bounty of fresh Sunkist citrus fruit in order to continue treating friends and family to their flavorful recipes.

Keys submitted her Fire & Ice Citrus Steaks & Salsa recipe for the contest’s Entree category, putting a distinctive spin on grilled steaks and typical salsa. The Fourth of July is America’s Independence Day. It is a special day in the minds and hearts of patriotic citizens of this country and there are many ways we celebrate that patriotism. If you are looking for a little something extra to add to your Independence Day menu try some of the ideas below. Remember that the red, white, and blue of the American flag can be excellent color additions to your fabulous fourth menu and make it definitely firework worthy.

It is fairly safe to say that for most of the country the weather on the fourth of July is going to be a little bit on the warm side. While there are exceptions to every rule this is the general rule of thumb. For this reason you should prepare your menu according to that and avoid foods that are going to melt quickly or will not look as appealing in warm weather. You should also take proper precautions for storage and keeping things from spoiling by leaving them out in the elements too long. Store as much of the food as possible until it is time to serve.

This may somewhat limit your offerings but opens the door to other offerings. Rather than have chilled pies for dessert choose cake that can be stored at room temperature. There are sure to be a few chilled recipes or dishes that are best served and/or stored chilled. Be sure to have plenty of cold gel packs or ice on hand and plenty of ice chests and other appropriate containers, especially if you are going to be camping or cooking out away from home, on hand to take care of at least the amount of food you are contributing that needs cold storage.

If you are going to be camping out or enjoying the great outdoors on the fourth consider foods that can be prepared with a Dutch oven. There are many great recipes and these foods can pretty well cook for the prescribed length of time and served immediately if you plan properly. These ovens are quite useful and can prepare everything from cakes and muffins to stews, chili, and roast beef with vegetables. In other words, a Dutch oven opens doors that may not be widely available to the average camper on a cookout.

Foil packet meals are also excellent choices for your Fourth of July cookouts. These leave little mess, little fuss, and more often than not taste great. This makes them an excellent choice for cooking on a grill or even in a Dutch oven if you have one at your disposal, which I highly recommend not only for Fourth of July meal preparations but also any time you are cooking in the great outdoors. You might find that you love it so much you don’t want to do without it.

Another great tip when cooking away from home on the Fourth of July is to keep things simple. You do not want to lug around stacks of condiments, dishes, bowls, trays, etc. Keep things as simple as possible and try to use dishes that require few ingredients yet still taste great. The more simple things are when dining in the great outdoors the more you can appreciate the simplicity of being in the great outdoors.

Don’t forget the appeal of simple hamburgers, hot dogs, and brats as great Fourth of July meal ideas. These foods are easy to prepare, easy to clean up, and go great with chips. No muss, no fuss, remember? The less time you spend on meal preparations, the more time you have available to get around to enjoying your time in our great countryside. I can’t think of many better ways to celebrate our independence as a nation than by enjoying it.
