Use butter in your cooking instead of margarine. It naturally mixes better in your recipes and contains dairy products rather than vegetable oil so contains health benefits as well. Dairy products are higher in healthy fats and will provide more flavor and natural texture to your food than margarine will.

Do not feel as though you must follow every recipe to the letter. While cook times and techniques are less flexible, you can often leave out ingredients that you don’t like, especially spices or other non-essential ingredients. You can also add ingredients that you think will be more pleasing to your or your family’s palates.

Sea air, crisp apples, the brisk, spice of fallen leaves – there are few things that say autumn in New England like the scents that seem to buffet the senses from everywhere. Among those marvelous treats for the senses are popular dishes from appetizer to dessert that you just won’t find – or at least won’t find quite the same way – anywhere else in the country. If you doubt it, there’s always an ad that was popular this past autumn – after the Red Sox won the World Series. In it, a man was explaining, “Son, when you live in New England there are three basic truths… clam chowder is white…”

And the other two truths don’t matter. We New Englanders take our clam chowder seriously. Up and down the New England coast throughout the autumn, nearly every town and township has its Chowder Festival. Throughout the six states, restaurants cook up pots of chowder from their best recipes and compete to be named Best Clam Chowder. The granddaddy of all New England Chowder Festivals is held in Newport, Rhode Island, where dozens of area restaurants compete for the title of ‘America’s Best Clam Chowder’.

It’s a simple enough dish, but like chili in Texas and crab cakes in Maryland, every cook has their own special twist on the recipe. There are the basics: clams, potatoes and milk. From there, it’s every chef for himself. Some swear that clam chowder without salt pork is just potage. Others insist that clam chowder can’t be made without onion. Chefs nearly come to blows over whether heavy cream should ever be used and why a butter and flour roux is a better base than clam liquor. Secret recipes abound – and everyone has their favorites.

My own personal favorite is the thick, creamy, eat-it-with-a-fork variety of clam chowder served at Legal Seafood and Au Bon Pain in Boston. Rich and laden with chunks of potato, meaty bits of clam, onions, garlic and salt pork, it’s a meal rather than an opener for one. Served with a slab of homemade bread slathered with butter, it’s guaranteed to raise your cholesterol level and please your taste buds for hours.

While many chefs cry sacrilege, others believe that fresh corn adds the perfect touch of crisp sweetness to the rich broth and pungent bits of clam meat. Corn isn’t the only bone of contention when it comes to this regional specialty. Purists insist that the only real ingredients in clam chowder are clams, water, milk, onions, potatoes and butter. They argue whether chowder should be made with mussels or littlenecks (if you’re in Maine, it’s littlenecks – in Connecticut, mussels. Anywhere else – it varies), whether to add the clam bellies or just the necks, even whether clams should be steamed ‘virgin’ or with garlic, wine or beer.

Whether you like your chowder thick or thin, with or without corn, flavored with salt pork or bacon or something else entirely, there is one thing on which all New Englanders agree – clam chowder is white. We’re not sure what it is that they serve in Manhattan – but it’s not clam chowder.

Macayo’s Fajita

Marinade
1 tablespoon salt
1/4 tablespoon white pepper
1/4 lime, squeezed
3 cloves fresh garlic, chopped
2 tablespoons vegetable oil

In a large bowl, whisk together all Marinade ingredients. Put meat in marinade and set aside for at least one hour.

Preheat oven to 200 degrees F. Set tortillas in for 1 to 3 minutes, to warm. Remove and put into a covered basket.

1 pound beef skirt (flank steak) or chicken breast,
sliced into 1/4 x 3-inch long strips
1 large whole onion, chopped
1/2 cup olive oil or chili oil

Heat a large skillet and add olive oil. Add marinated meat and onion and sauté until onion becomes translucent. Place cooked meat in a large bowl or platter and serve with tortillas, toppings and garnishes.

For each fajita, fill a tortilla with meat and desired amounts of garnishes and toppings and roll up like a burrito. Serve with refried beans, black beans or Spanish rice. Yields 4 to 6 servings.

Variations
For spicier marinade, add cayenne pepper or crushed dry red chili pepper. Instead of lime juice, try pineapple juice, papaya juice, beer, wine or barbecue sauce.

Garnishes and Toppings
1 cup sour cream
1 cup guacamole
1 cup salsa
6 lime wedges
Avocado chunks
1 can whole green chiles, chopped
Tomatoes, sliced into strips
Shredded lettuce

Spanish Sausage and Peppers
1 Goya Chorizo Sausage
Olive Oil
1 Pepper (Your choice of sweet, red, cayenne, chili, etc.)
Sherry vinegar
Fresh parsley, roughly chopped
Chop sausage into bite size chunks. Put olive oil into a frying pan and fry sausage on high heat. Let the fat from the sausage come out into the oil. Cut the pepper into bite size squares. Turn the sausage and add the pepper to the pan. Add a splash of vinegar and the parsley and then mix everything. Skewer pieces of sausage and pepper with toothpicks and put onto a warm plate and serve.

Recipe: Szechuan Shrimp

Szechuan Shrimp

INGREDIENTS:

1 pound Shrimp — shelled
in half lengthwise — rinsed and patted d
substitute raw — chicken cubed
1/4 teaspoon Salt
1 teaspoon Chinese rice wine — or dry sherry
1 teaspoon Soy sauce
2 tablespoons Flour
1 tablespoon Cornstarch
1 Egg — lightly beaten
1/2 teaspoon Baking soda

Seasoning:

1 teaspoon Ginger root — or ground ginger
2 teaspoons Minced garlic
2 Scallions cut in — peas sized pieces
2 Dried chili pepper

Sauce:

3 tablespoons Sugar
2 teaspoons Sherry
5 teaspoons Soy sauce
1 teaspoon White vinegar
3 tablespoons Catsup
1 tablespoon Water

PREPARATION:

Mix above together and refrigerate for one hour (at least) Place above seasonings in bowl and set aside Mix and set aside above sauce ingredients 3 C peanut oil for deep frying 1 tsp sesame oil Fry shrimp, or chicken in peanut oil. Place in bowl and set aside.

Pour off all but 2 T oil and add seasonings and brown.
Stir in sauce until bubbles. Return shrimp. Add sesame oil.

This recipe is absolutely sensational. However it does not make alot of sauce for rice. I usually double the sauce ingredients. It is very hot. If you like food milder leave out some chilis.

Kentucky Fried Chicken Honey BBQ Wings
1 1/4 cups catsup
1/3 cup white vinegar
1/4 cup molasses
1/4 cup honey
1 teaspoon liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon chili powder
6 to 8 cups vegetable oil
20 chicken wing pieces
1 egg, beaten
1 cup milk
2 cups flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon MSG

Combine the first nine ingredients in a small saucepan over medium heat. Stir until ingredients are well-combined and bring to a boil. Reduce heat and simmer uncovered for 15 to 20 minutes.

As sauce is simmering, heat up 6 to 8 cups of oil in a deep fryer set to 350 degrees F.

Combine the beaten egg with the milk in a small bowl.

In another small bowl, combine the flour, salt, pepper and MSG.

When oil is hot, dip each wing first in the flour mixture, then into the milk and egg mixture, and back into the flour. Arrange wings on a plate until each one is breaded.

Fry the wings in the oil for 8 to 12 minutes or until light, golden brown. Drain on paper towels.

When the sauce is done, brush the entire surface of each wing with a light coating of sauce. Serve immediately.

Comfort Food Trends Bring Us Back to our Roots

Comfort food. It even sounds warm and welcoming – like cuddling up by the fire on a cold winter day. Comfort food trends have seen a real resurgence in recent years and our desire for comfort food seems to be holding strong. So what is comfort food? Generally it’s the food we have good memories about, the food we think of when we hear the word homemade, and that reminds us of simpler times.
The list of favorite comfort foods can be different for each of us. While homemade macaroni and cheese and meatloaf with mashed potatoes have been staples for many of us, for some of us comfort food may include a delicious cheesy lasagna, or yummy sweet potato pie. We all tend to love the food that takes us back to our roots – the foods we grew up with.

Why the increased desire for comfort foods? It seems to be a combination of things. People are busier and more stressed than ever. The last few years have also resulted in many of us feeling less safe in the world. We want to feel warm and safe again, the way we did when we were young and the world seemed simpler.
Comfort food trend watchers say that we are craving the foods we grew up with. People want to enjoy their homes and entertain at home. We’re expressing an interest in cooking everything from easy party food recipes to BBQ to slow cooked roasts with all the trimmings.
We also want to experience different tastes, sometimes tastes from around the world, sometimes the familiar foods we love, with twist or an extra bit of pizzazz. So we have things like garlic mashed potatoes, 4 cheese macaroni and cheese and thin crust gourmet pizzas.
We’re also a population that is becoming more aware of health and making healthy food choices. With aging baby boomers creating a bulge in our populations, healthy lifestyle trends are front and center. We want fewer calories but all the taste, healthier eating with the comforts of our favorite foods. So where does this leave us? How do we combine comfort food trends with healthier lifestyle trends?
As much as we love our comfort foods many of us now look for ways to turn them into healthier choices, with a lower fat content and fewer calories. We tweak those great recipes from the past so we maintain (or sometimes even improve) the taste but forgo some of the fat, unhealthy carbs and sugar content. And while most of us are still eating our favorite comfort foods, maybe it’s just a little less often. We might decide to share that piece of amazing cheesecake so we get the taste but not the pounds.
We’re going back to our roots – but with a nod to healthy food choices and a few wonderful, tasty twists along the way.

China Lily Happy Family Basket

Great to serve for Chinese New Year!

A.
4 ounces each scallops, jumbo shrimp and chicken meat

B.
1 1/2 teaspoons cornstarch
2 tablespoons water
1 tablespoon oil

C.
4 tablespoons Kikoman soy sauce
1 tablespoon dark (or white) vinegar
2 teaspoons granulated sugar
1 teaspoon cornstarch
2 tablespoons water
2 teaspoons sesame oil
1 tablespoon chili paste

D.
1 tablespoon each minced garlic, ginger and green onion
2 ounces each red bell pepper, baby corn, water chestnuts,
snow peas, straw mushrooms, cooking oil

Step 1: Combine A. and B. together for about 15 minutes.

Step 2: Combine cup for sauce.

Step 3: Pour 2 tablespoons of cooking oil into a wok over high heat, stir fry all the vegetables for about 3 minutes or until crispy tender, remove from wok.

Step 4: Heat 1/4 cup of oil in wok add A and stir fry for about 2 minutes or until chicken is done; remove from wok.

Step 5: Put D. into wok and stir fry for 10 seconds. Put D into the wok together with vegetables and cooked chicken mixture. Stir fry for about 1 minute until the sauces are well combined with the ingredients.

Serve immediately with steamed rice.

Dear Penny,
Some of my favorite ways to save money are the easiest. Of course, we all like the easy things in life. I know I’m not the type to reuse a plastic sandwich bag, so I just buy plastic containers instead that can be used forever. Know yourself and your habits so you can pick and choose how to save money.

1. Have Meals on Hand
Freezer Cooking is my personal favorite way to save money. Instead of cooking one batch of food every night, you can double or even quadruple some of your favorite recipes and freeze the extra. That way, the next time you’re in a hurry and tempted to pick up the phone to order a $25 pizza delivery, instead you can go to your freezer and grab a container of lasagna and enjoy it for a fraction of the price.

Some meals that are easy to freeze are chili, most soups, rice casseroles, lasagna, and stir fry dishes. Always test a small batch before you invest too much time into a big cooking session just to make sure your favorite recipe freezes well.

2. Monthly money drain
Another way to save money is to look through your credit card bill and your monthly bank statement for recurring charges.

For instance, if you have the same cell phone you’ve had for more than a year, you might be able to find a cheaper plan. You may even be able to get enough minutes with enough coverage that you can cancel your landline phone and long distance and just pay your cell bill each month.

Or do you really need all those bells and whistles on your cable service? If you’re paying for HBO, then do you also need a subscription to a Movie club where you get movies in the mail? There’s definitely room for saving money here.

Cancel that book of the month club. On many of these plans, the cost of shipping costs more than picking up books at a bookstore. Or buy books and share them with friends. Then, when you’re done reading them, sell them on eBay or at a used book store to fund your book addiction.

Are you a beauty product junkie? Preach on! This is one of my main weaknesses. I love lotions, soaps, bath salts, etc. I’ve started making my own with a few simple recipes and am saving a lot of money each month. This could get addicting, though. But, I can’t go broke buying eggs for my face or baking soda for a soothing bath. I can always eat it if I don’t use it on my skin.

If you look around, you just might find some areas where you are wasting money. Between dining out, pizza delivery, cable bill, and beauty expenses, you’ll find ways to keep more money in your pockets.
