A recent camping trip with my Cub Scouts inspired the creation of
this chili recipe. We have another camping trip coming up in
October, which is National Chili Month. I want to be able to
showcase this chili during that trip.
Campfire Chili Ingredients
• 1 pound ground hamburger meat
• 1 can chili beans
• 1 can Rotel tomatoes and peppers
• 1 can tomato sauce
• 1 small onion, diced
• 1 packet of taco seasoning
Before leaving to go camping, saute diced onions and brown ground
meat over medium heat. Let cool, and place in ziploc bag to be
stored in cooler until use at campsite.
Once at your campsite, there are several ways you can cook this
A Dutch oven can be used if you have enough time to prepare the
coals and let the chili cook before your meal time. Simply add
all the ingredients to your Dutch oven. Stir. Place on
top of coals and place coals on top of the Dutch oven lid. In
a couple of hours, you will have great campfire chili. If you
line your Dutch oven with foil, your cleanup will be much easier.
Another method of cooking would be to use a pot, or in my case, a
cast iron frying pan, over a propane stove. After combining
the ingredients, simmer for at least 20 minutes. Stir
Serve campfire chili with hot sauce and shredded cheese.
You can serve it over tortilla chips or even pasta. I usually
pre-cook the pasta at home and preheat it in foil campfire packets
with a little butter added.
