This recipe for chili con carne is especially
good served over pasta with a fruit salad side dish. Chili con
Carne is a great meal for casual dinner guests since you make the
chili ahead of time and let it simmer until ready to eat.
For a buffet style gathering, chili con carne can
be a great alternative to traditional meat dishes. It can be
offered with several types of pasta and even rice. You can
even offer a vegetarian chili as well as the chili con carne.
For a simple family meal, this recipe for chili
con carne can be cooked in a crock pot on low heat while you are at
work (or play) and it will be ready to eat when you are!
Chili con Carne Ingredients
• 1 pound chopped skirt steak (1/2 inch cubes or smaller if you
prefer)
• 1 medium green pepper chopped
• 1 large onion chopped
• 3 garlic cloves finely minced
• 1 teaspoon salt
• 1/8 teaspoon dried basil
• 2 tablespoons chili powder
• 1 bay leaf
• 1 teaspoon crushed cumin seed
• 1/4 teaspoon cayenne pepper
• 3 tablespoons butter
• 3 cups chicken broth
• 1 1/3 cups canned chopped tomatoes (approximately 1 can)
Directions - Recipe for Chili con Carne
In a large saucepan, melt 3 tablespoons butter.
Add onions, green pepper and garlic. Cook and stir until
onions and peppers are tender. Add the chopped skirt steak to
the onions, pepper and garlic. Stir until cooked through
Pour the chicken broth and tomatoes into the
meat mixture. Stir in salt, basil, chili powder, bay leaf,
cumin, and cayenne pepper.
Bring chili con carne to a boil, then reduce heat
to simmer. Cook for 3 hours until the chili con carne has
thickened. Make sure to stir occasionally.
Before serving you may choose to add 1 can of
beans and cook until heated through.
