Have you ever had one of those nights when you
really don't feel like cooking but also don't feel like going out to
eat? This green chili chicken soup recipe is a favorite of
mine on nights like those. It's quick and easy and, best of
all, you can keep the ingredients stocked in your pantry.
• 1 large can salsa
verde ( I use the jar of Trader Joe's salsa verde)
• 1 can of chicken breast
• 1 cup chicken broth

Combine all ingredients
in a medium saucepan. Heat thoroughly.
Serve soup with
tortillas or tortilla chips on the side. Sliced avocado and
sour cream are also good additions to the soup just before serving.
I know some of you may
think it's cheating to use all canned ingredients for this soup but
by using canned goods with no preservatives, like those from Trader
Joe's, you are constructing a nutritious quick meal that your entire
family can enjoy. It's even faster than going through a fast
food drive thru and much healthier.
I have also used
leftover rotisserie chicken instead of canned chicken and the soup
is fabulous. Any leftover chicken will work, and if you have
some leftover corn, you can add that to the soup.
